Mary-Louise Parker's Maple Butter Popovers

Popovers
- 1 1/2 Cup Whole Milk Room temperature (you can also warm the milk but not too hot!)
- 3 Large Eggs Room temperature
- 1 1/2 Cups All Purpose Flour
- 1 Tsp Vanilla Extract
- 1 Tsp Kosher Salt
- 1 Tbsp Melted Butter Clarified is best
- 1/2 Cup Sugar
- 1 1/2 Tbsp Cinnamon
- Popover Pan
- Pastry Brush
- Wax Paper

Directions:
Preheat oven to 450
Put the popover pan in the oven 3-5 minutes before you bake, to preheat the pan itself
In medium bowl, vigorously whisk together milk & eggs until frothy
Add tbsp melted butter, vanilla, flour & salt
Whisk to combine (don’t over-mix, lumps are okay)
For popovers:
Remove popover pan from oven and coat each cup with 1tsp butter
Fill cups ¾ full
Bake 15-18 minutes at 450 degrees
Lower to 350 degrees and bake another 18 minutes
For maple butter:
Place 6 tbsp of butter on a pan with medium heat until golden brown
Combine cinnamon & sugar in a bowl
Brush popovers with browned butter and roll generously through cinnamon sugar mixture
Filling is optional:
Combine cream cheese and maple syrup with an electric mixer OR softened butter & maple syrup
Slit & stuff popovers with filing
