Pilar Valdes' Mr. Ball Legs Cake Pop
Using the leftover icing and cake from the Slasher Piñata cake, we made a cake pop inspired by Mr. Ball Legs from Santa Clarita Diet. Make sure that your leftover cake and icing are fully chilled before beginning.
ingredients
- 4 oz Chocolate Cake, chilled
- 2 tbsp Cream Cheese Icing, chilled
- 3 oz White Chocolate, chopped
- 3 oz Bittersweet Chocolate, chopped
- 48 Pretzel rods (2” x 0.25”)
- Black Nonpareils (optional)
- Red Edible Lustre Dust (optional)
prep
In a medium bowl, crumble the cake into small pieces. Add the cream cheese and smoosh together until fully combined. Using an ice cream scoop, divide the cake into three portions. Roll each one into a smooth ball. Place in the refrigerator to chill while preparing the legs.
Prepare a baking sheet lined with parchment paper. Either using a double boiler method or in a microwave, melt the white chocolate. (If using a microwave, we recommend 15 second increments and stirring in between, until fully melted and smooth.) Dip each pretzel rod into the melted white chocolate until fully coated, allowing the excess to drip back into the bowl. Place on the prepared baking sheet; repeat with the remaining pretzel rods. Transfer the fully coated rods to the refrigerator to chill.
Remove the cake balls from the refrigerator. Prepare another baking sheet lined with parchment paper. Either using a double boiler method or in a microwave, melt the remaining chocolate. (If using a microwave, we recommend 15 second increments and stirring in between, until fully melted and smooth.) Using a lollipop stick or skewer, dip the chocolate ball into the melted chocolate, making sure it is evenly coated, allowing the excess to drip back into the bowl. Sprinkle with the black nonpareils. Set aside on the parchment lined baking sheet and repeat with the remaining ball. Transfer to the refrigerator to chill until the coating is firm.
Using whatever melted chocolate you have left (you can re-warm, if needed), dip the ends of two pretzel sticks and attach to make joints and return to the parchment sheet. Repeat with the remaining legs. Allow to cool and firm in the fridge, 10-15 minutes. Using the melted chocolate as a glue, attach the jointed legs to the body of Mr. Ball.
Return to the fridge to firm, 10-15 minutes. Spray the body with edible luster dust. Enjoy!
